Peel the ginger and grate it on a fine grater.
Place the grated ginger in a saucepan with a liter of water. Bring to a boil.
Squeeze the lemons and oranges to extract the juice. Don't discard the citrus peels—cut them into small pieces and add them to the pan with the ginger.
