One day, sweltering in the summer heat, I wondered why it was impossible to combine two of my favorite summer treats, classic lemonade and ice cream, into one delicious dessert. Store-bought lemon ice cream was a huge disappointment. The citrus flavor was weak, and the bright yellow color was clearly achieved with artificial colors. Besides, you can hardly call a commercial dessert healthy.

I dug through a pile recipes in search of the one. And, after dozens of failed attempts, I found the perfect, simple, and accessible one, lemon ice cream recipeAnd today I'm ready to share it with you!

Preparation

Step 1

Wash the lemons, then carefully grate the zest (the top layer of the peel).

Step 2

Cut the peeled lemons in half and squeeze the juice out of them.

Step 3

Place the sugar in a saucepan, pour in cold water, and add the lemon zest. Heat over high heat until the sugar is completely dissolved, then bring to a boil and simmer for 20 minutes.

Step 4

Let the finished syrup cool slightly. Then strain it through a sieve. Collect the zest and return it to the syrup. Let the syrup cool completely.

Step 5

Once the syrup has cooled, add freshly squeezed lemon juice through a sieve. Stir and set aside.

Step 6

Pour the heavy cream into a deep bowl and beat it with a mixer until thick. The cream should be cold beforehand.

Step 7

When the cream has reached a thick consistency, pour in the lemon syrup in a thin stream, continuing to whisk the mixture.

Step 8

Pour the ice cream into a suitable freezer container or leave it in the bowl you used to whip the cream. Cover with plastic wrap and freeze for 5-10 hours.

Let the ice cream melt slightly before serving, removing it from the freezer half an hour before serving. It's ready.

How do diet lemon ice cream

Lemon ice cream You can eat it even if you're watching your figure and following a diet. It's actually incredibly simple. Just replace some ingredients in the recipe with lower-calorie ones, and you can enjoy your favorite treat without hurting your waistline.

What can I substitute? You only need to change two ingredients!

  • 33% Cream. Ice cream gets its creamy, melting texture from heavy cream. But there are more diet-friendly options. For example, you can replace 33% cream with thick yogurt, low-fat sour cream, or lower-fat cream. Of course, it will be less thick when whipped, but a little more time in the freezer will give the ice cream the desired consistency.

Other options: coconut, almond, oat, and even rice cream. They're a great substitute for heavy cream, but they're a bit pricey.

  • Sugar. Sugar in lemon ice cream is used to make the syrup. But it's easy to omit. Ripe orange can add natural sweetness to the syrup, and thus to the ice cream.

If you still like sweet desserts, use a sugar substitute, honey, or maple syrup.

  • To get a smoother ice cream consistency, use an ice cream maker to freeze it.
  • Place the cream in the refrigerator before whipping to ensure it's cold. This will allow it to whip into a stiffer consistency.
  • The syrup needs to be cooled very well so that the ice cream does not separate due to the temperature change.
  • Remove the ice cream from the freezer about 15-20 minutes before serving to allow the dessert to melt slightly.
  • Feel free to add vanilla, mint, chocolate chips, and rosemary to the recipe. This will give the dessert a more distinct and interesting flavor and aroma.
