In a mixing bowl, mix 2 large eggs (use the white and yolk), a pinch of salt, 100 grams of sugar and 10 grams of vanilla sugar.
Also add finely grated lemon zest.
Mix all ingredients with a whisk until smooth and sugar is completely dissolved.
Add 80 grams of melted butter to the mixture and mix again until smooth. This will give our lemon pastries a fluffy, soft texture.
Mix flour with baking powder and add to the base in several stages, kneading a soft, elastic dough.
At the final stage, knead the dough with your hands.
The resulting dough should be smooth and soft, like the one in the photo. It's best to refrigerate it for 30 minutes to fully firm up, wrapped in plastic wrap.
From the well-chilled dough, tear off pieces and roll them between your palms into small balls.
Roll each piece in powdered sugar to create a beautiful glaze with golden cracks during baking.
Place the cookies on a parchment-lined baking sheet. Keep in mind that each cookie will expand during baking, so it's important to leave enough headspace.
Bake lemon cookies at 180℃ for about 15-20 minutes.
