Pour water over the agar-agar. Mix thoroughly and set aside.
Pour pineapple juice into a saucepan.
Add sugar. Pineapple juice is already quite sweet, so you can use a sweetener to taste or leave it out entirely.
Place the mixture over medium heat and cook until the sugar is completely dissolved. Stir occasionally with a whisk to prevent the sugar from burning.
Remove the juice from the heat and pour in the agar in a thin stream. Mix thoroughly.
Place the saucepan back on the heat and cook for another 5 minutes until viscous, stirring constantly.
Divide the mixture into two parts. Add a few drops of red gel food coloring to one half.
In the second one - yellow.
Pour the red mixture into the molds to a depth of 1–1.5 cm. Leave for 10–15 minutes for the gelling agent to set.
Add the second color mixture. Let the marmalade set at room temperature for 35–40 minutes.
