First, pour the currants into a colander and rinse thoroughly under running water. Wash store-bought berries especially thoroughly to remove dust and any other impurities.

Place the berries in a saucepan, add water, and set over medium heat. Cook, stirring, until the berries soften. Use a heavy-bottomed saucepan and stir constantly to prevent the berries from burning.

Step 3

Remove the still-hot berry mixture from the stove and puree it using an immersion blender. If you don't have a blender, you can mash the mixture with a spoon or press it through a sieve.

Step 4

After the berries are crushed, pass them through a fine sieve to remove any remaining skins, seeds, and large particles. The remaining pulp can be used to make fruit drink or compote.

Add sugar to the resulting puree and mix thoroughly. By the way, it's recommended to use a wooden spoon, not a metal one, when making jam. This is because iron is oxidized by the acids in the berries, while wood is not.

Place the resulting puree over medium heat, bring to a boil, and simmer for 30-35 minutes. To test the jelly's readiness, you can drop a few drops onto a plate. The jelly is ready when the drop doesn't run and hardens after a couple of minutes.

Pour the mixture into a mold. This can be a single glass mold, as in the photo, or small individual molds. It all depends on your capabilities and preferences.

Place the mold in the refrigerator until completely cool (it's best to leave the marmalade in the refrigerator overnight). Remove the finished treat from the refrigerator and cut into small cubes.
