Pour the gooseberries into a container and blend them until there is almost no peel left.
Next, add sugar to the gooseberries and mix everything thoroughly.
Instead of all these steps, you can take 400 g of ready-made puree.
Place the gooseberry puree over medium heat and cook for 15 minutes until slightly thickened, stirring constantly.
Remove the gooseberries from the heat. The color will have changed slightly during cooking, so you can add a few drops of food coloring.
Place the puree back on the heat and bring to a boil.
Then add agar-agar into the puree and mix everything thoroughly.
In this recipe we use agar-agar strength 900.
Boil the gooseberries and agar for 2-3 minutes. You'll notice the puree thickening as it cooks.
Next, pour the hot puree into molds. Silicone molds are best for this purpose.
We leave the marmalade in the molds at room temperature for a couple of hours, and then put it in the refrigerator for about 3 hours.
Carefully remove the finished marmalade from the silicone molds. If desired, you can also roll our treat in sugar.

- If you don't like gooseberry seeds in your marmalade, you can strain the resulting puree through a sieve.
- You can also use a regular flat pan lined with cling film if you don't have silicone molds. Then, simply cut the marmalade layer into squares.
- Remember that agar-agar hardens at room temperature, so you need to work quickly, especially if you want to correct any imperfections.
Design and submission
Gooseberry marmalade itself looks quite vibrant and beautiful. The berries themselves will add a touch of sophistication, as the bright pink or red colors create a wonderful contrast against the green of the treat.
