Combine the pectin and 50 g of sugar. At this point, mix everything thoroughly with a fork.
Add water to the citric acid and mix thoroughly until the crystals are completely dissolved.
Pour the cherry puree into the pan. It should be a bright, rich color.
Add sugar to the cherry puree. Mix thoroughly until smooth.
Place the puree in a saucepan over medium heat. Stir constantly with a whisk until the sugar is completely dissolved.
Add pectin and sugar to the puree. Mix thoroughly to avoid lumps. Reduce heat and simmer for another 10 minutes, stirring constantly.
Remove the marmalade from the heat and add our lemon juice to it.
Pour the marmalade into the mold. It cools quickly, so pour it quickly. Let it cool at room temperature for 24 hours, uncovered.
After this time, run a knife along the sides of the mold and carefully remove the marmalade. Next, cut it into squares or use various shapes.
Then, line a hard, flat surface with parchment paper and place the marmalade on it, wet side up. Let it rest for another 12 hours.
Well-dried marmalade is ready for use.
