Agar-agar marmalade without sugar

Agar-agar is considered the best gelling agent for making homemade marmalade. Unlike gelatin, it is less susceptible to high temperatures, allowing the products to retain their shape for a long time. Moreover, the texture of the dessert is more reminiscent of ideal marmalade—springy, dense, and delicate. Agar-agar is sold in almost all grocery stores, so it's easy to find.
