Marshmallow fondant is versatile, as its consistency allows you to roll out elastic dough into a thin sheet to cover a cake of any shape, as well as use it for molding confectionery decorations.

Decorating cakes with marshmallow fondant

Please note that you can make fondant at home not from just any kind of marshmallow, but from airy marshmallow pillows!

Cake fondant is typically made with plain or white marshmallows without any additives. White marshmallows are the best choice, as they allow for different colors by adding liquid gel food coloring during mixing.

Step 1

Prepare all the ingredients. Next, dissolve 3 grams of citric acid in 2-3 teaspoons of water and add to the bowl with the marshmallows.

You can also use 2 teaspoons of freshly squeezed lemon juice.
Step 2

Add 30 grams of refined vegetable oil to the marshmallow mixture. You'll need some more for the kneading stage.

You can replace it with melted butter, but then the mixture will turn out a little yellowish, which is undesirable if you want white mastic.
Step 3

Microwave the marshmallows in short bursts and begin mixing. At first, the mixture will be uneven, as in the photo, but gradually it will change as you mix.

Step 4

Add 250 grams of finely sifted powdered sugar to the marshmallow mixture. Mix thoroughly again.

Step 5

Add 200 grams of corn starch and knead a little more in the bowl, then move on to kneading the mixture on the table.

You can make mastic for covering with potato starch, but in confectionery, corn starch is more often used, as it does not impart an extraneous taste to the dish.
Step 6

While kneading the plastic sugar mixture, periodically grease your hands with vegetable oil. This will prevent the sugar dough from sticking to your hands, and the resulting mixture will be more elastic, which is good for both sculpting figures and shaping fondant sheets.

Step 7

If you need colored marshmallow fondant for modeling or covering, add a little gel food coloring at this stage.

It's not recommended to mix the dye mixture with bare hands, as the pigment can be difficult to remove from the skin. It's best to use gloves to protect your hands if you plan to create colored fondant decorations.

In our case, 2 drops of dye were enough to obtain a soft blue shade.

Please note! Even if you find advice on how to make bright, richly colored marshmallow fondant at home, don't try to replicate it. Too much color will alter the texture of the dough, making it loose and uneven, making the fondant very easy to tear.

Wrap the finished mastic tightly in a bag and let it sit at room temperature for 4-6 hours (or even better, overnight) before further use.

Now you know how to quickly make fondant from ordinary marshmallows at home without using any special equipment. But if you have a dough mixer or stand mixer, you can use it to make the process even easier and faster.

The finished mastic can be stored in the refrigerator for up to 6 weeks, and if frozen, it will keep for up to 3 months. It's important to prevent the mixture from drying out during storage, so the mastic must be sealed tightly.
