Pour the egg whites at room temperature into a clean, dry, degreased metal container.
Beat the egg whites at medium speed until fluffy white foam forms, about 10-15 minutes.
Add powdered sugar.
Continue beating at maximum speed until white peaks form.
Add starch and citric acid to stabilize. Gently mix the mixture with a spatula or mixer at minimum speed.
Line a baking sheet with parchment paper. Spread the meringue evenly over the top, creating a 5cm-thick square.
Bake the meringue in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) for 30-35 minutes. Baking time will vary depending on your oven. Transfer the finished meringue to a wire rack and let cool.
For the cream, combine mascarpone or cream cheese with 33-35% heavy cream in a clean bowl. Adjust the fat content to your liking.
Add sugar or powdered sugar. Beat with a mixer until thick and smooth.
Place the cream on the cooled meringue and distribute it evenly over the cake layer.
Sprinkle the cream with sliced kiwi on top.
Roll the meringue into a tight log. Cover with cling film and refrigerate for a couple of hours to allow the dessert to soak and set.
