Preparation

Step 1

Pour the milk into a saucepan or heavy-bottomed pot and place it on the stove. If you choose the right pot, the milk will heat evenly and won't burn.

Bring the milk to a boil, but do not let it boil. Add vanilla sugar and stir well.

Wash the eggs thoroughly. Separate the whites from the yolks. Make sure not a drop of yolk gets into the whites. The bowl for the whites should also be dry and clean.

Add 1 tablespoon of sugar and 100 ml of milk to the yolks. Add the milk in small portions, whisking thoroughly.

Step 5

Return the milk to the stove and whisk in the egg mixture, stirring constantly. Whisk well to prevent the yolks from curdling. Simmer for 8-10 minutes, stirring constantly. Be careful not to let the mixture boil. Remove from heat and let cool to room temperature.

Step 6

In a separate bowl, combine the egg whites and remaining sugar. Mix thoroughly with a whisk and heat in a double boiler, stirring constantly, until the sugar is completely dissolved (no grains remain when rubbed between your fingers).

Step 7

Beat the egg whites with a mixer at high speed until thick and stiff peaks form. Add the cooled milk mixture and beat with a mixer until smooth.

Step 8

Pour the resulting mixture into a freezer container, cover with a lid or cling film and place in the freezer for 4-5 hours until solidified.
