The dessert originated as far back as the 17th century. It's unclear exactly where it was first prepared. But France and England have been vying for the title of "Crème Brûlée's birthplace" for centuries.

Making this treat is quite simple: combine cream, sugar, eggs, and vanilla. Mix everything well and bake. The result is a very tender and airy consistency with a pleasant caramel flavor and a crispy crust.

The popularity of the French "Crème Brûlée" inspired confectioners to create a luxurious, velvety ice cream of the same name with similar properties. Throughout its history, it has undergone numerous changes and modifications.

The classic version requires cow's milk, dry milk, heavy cream, powdered sugar, and starch. First, make the caramel, then whisk together the milk ingredients and sugar. Combine the two mixtures, strain, and thicken with starch over heat. The resulting ice cream is both calorie-dense and nutritious.

Residents of the USSR had a particular fondness for crème brûlée. Inexpensive and delicious, it was available everywhere. It was also a natural treat. While the frozen dessert may not be what it used to be, it's always possible to make it at home.

Preparation

Step 1

Place 80 grams of sugar in a saucepan and heat over high heat until the caramel turns brown. Stir constantly to prevent the caramel from burning.

Step 2

When the caramel has reached a rich brown color, slowly pour in 80 ml of hot milk. Stir well. Cook until the mixture thickens.

Step 3

Place the dry milk and remaining sugar in a bowl. Mix thoroughly with a spoon until smooth. Then pour in two to three tablespoons of milk and blend until the mixture reaches a puree-like consistency.

Step 4

Add the caramel to the milk puree and mix until smooth. Mix the caramel thoroughly.

Step 5

Pour 530 ml of milk into the mixture. Stir. Then strain through a sieve lined with cheesecloth.

Step 6

Place the pan over medium heat and bring to a boil. Stir the mixture occasionally.

Step 7

Meanwhile, dissolve the cornstarch in the milk. Pour the cornstarch into the remaining 50 ml of milk and mix thoroughly to avoid lumps.

Step 8

When the milk-caramel mixture comes to a boil, pour in the diluted cornstarch. Stir vigorously. Let the mixture simmer until it thickens slightly, stirring occasionally.

Step 9

Remove the thickened mixture from the heat. Strain through a sieve. Cover with a lid or plastic wrap and cool to room temperature, then refrigerate to thoroughly chill.

Step 10

Whip cold cream with a fat content of at least 33% until stiff soft peaks form.

Step 11

Add the cooled milk-caramel mixture to the cream. Mix thoroughly until smooth. Place the ice cream in the freezer for 5-6 hours. For the first 3 hours, remove it and stir the mixture to break up any ice cubes.
