Preparation

Step 1

Take some savoyardi biscuits or other similar cookies and cut them in half. If the cookies are small, you can leave them as is.

Step 2

Brew instant coffee. Let it cool slightly. Add brandy or liqueur.

Use alcohol at your discretion. Non-alcoholic syrups can be used instead.
Step 3

Separate the egg yolks from the whites. Add sugar to the yolks and beat until fluffy and creamy.

Step 4

Add mascarpone cheese and vanilla extract to the yolk mixture. Mix thoroughly until completely combined.

Step 5

In a separate bowl, beat the egg whites until they form a standing white foam.

To ensure the egg whites whip faster, the bowl should be completely clean and dry. Metal or glass bowls are best. I recommend chilling the bowl and mixer attachments beforehand—this will help the egg whites whip better.

Add the whites to the yolk mixture and carefully mix everything with a spatula.

Step 7

Line the bottom and sides of a freezer pan with cling film or parchment paper. Fill the pan 1/3 full with the ice cream mixture.

Dip the cookies in coffee and brandy. Place half of the cookies in the pan. Then pour in the remaining half of the cream mixture. Repeat this process for another layer.
