Preparation

Step 1

Remove the pits from the cherries and place them in a saucepan. Add brown sugar. Stir. Set some of the berries aside for the filling. Blend the cherries in the saucepan with an immersion blender until smooth.

Step 2

Pass the mashed mixture through a sieve. Discard the pulp. Chop the reserved cherries into small pieces. Add them to the cherry syrup.

Step 3

Pour cornstarch into a saucepan. Stir well. Place the mixture on the stove over low heat and, stirring constantly, bring it to a boil until it thickens. Pour into a clean container and let cool.

Step 4

Grate the dark chocolate into thin shavings. You can do this with a knife, a grater, or a vegetable peeler.

Step 5

Take cold heavy cream and condensed milk. Pour the cream into a deep bowl. Add cinnamon. Whip the cream until soft peaks form.

Step 6

When the creamy mixture thickens, add the condensed milk. Continue whisking until stiff peaks form.

Step 7

Pour chocolate chips into the cream.

Step 8

Add the cherry jam. Gently stir the ingredients with a spatula until completely combined.

Step 9

Pour the prepared mixture into a container. Spread it evenly throughout the mold. Close the container with a lid and place it in the freezer for 5-6 hours. For the first 3 hours, remove the mixture every 40 minutes and stir it.

Answers to frequently asked questions

What are the best cherries to use in ice cream?
You can use any cherries you have on hand in this recipe. But keep in mind that the sugar content, acidity, and pigmentation of the cherries will determine everything from the flavor to the color of the ice cream. Therefore, it's important to use high-quality cherries.
Can you substitute full-fat cream for skim cream?
In theory, this is entirely possible, and some cooks use this trick to reduce the calories in ice cream. But remember that cream with less than 33% fat content will dramatically alter the flavor of the ice cream, and low-fat cream may not whip at all.

Possible replacements

  • Brown sugar can be substituted with white sugar, powdered sugar, or a sweetener. If the cherries are sweet enough, this product can be omitted.
  • Instead of cinnamon, add vanilla to the creamy mixture. It's not a good idea to combine these two ingredients together.
  • Cream can be replaced with thick, full-fat yogurt in a 1:1 ratio.
If I had a list of my favorite ice creams, cherry ice cream would definitely be in the top five! What's your favorite? Share your thoughts in the comments.
