Today, we invite you to try the simplest and most beloved recipe for apple mousse made with semolina since childhood. This homemade dessert is safe to serve even to small children, as it's a combination of semolina and natural applesauce.
If you want a thicker apple mousse, you can slightly modify the recipe by adding a little gelatin. However, even without this ingredient, the mixture will be thick, tender, and airy.

To prepare this delicious and healthy apple mousse with semolina, let's start by preparing the fruit. Wash the apples, peel them, and remove the core and seeds.
Place the peeled apples in a saucepan with a thick bottom and add a small amount of water (about halfway up the apples).
Boil the apples until soft.
Grind the prepared apples into puree using an immersion blender.
Add all the remaining water to the finished puree (you will need 1 liter of water in total) and add sugar.
Stir the mixture well and bring to a boil again.
Gradually pour 150 grams of anna groats into the boiling apple mixture, stirring constantly to prevent lumps from forming. Simmer over low heat like regular porridge, about 3-5 minutes.
Remove the prepared mousse base from the heat and cool to 30-40°C. If you need to cool the mixture quickly, a classic kitchen technique of cooling in a basin (or bowl) of cold water will do the trick.
Now all that's left to do is make a delicious, fluffy mousse from our apple-semolina base. We'll prepare it by whisking the mixture with a mixer while it's very cold. You can pre-chill the water you'll add at this stage to ensure the best results.
While whisking, the mixture should lighten significantly and increase in volume by 1.5-2 times. Continue whisking until the mousse has cooled completely to room temperature.
Homemade apple mousse prepared according to a simple recipe only needs to be beautifully arranged in a serving bowl and placed in the refrigerator to stabilize.
