Place butter, honey, sugar, salt and all the spices in a thick-bottomed saucepan.
Place the pan over low heat and heat, stirring continuously, until smooth.
Once the butter has melted, remove the pan from the heat and continue stirring the mixture until the sugar is completely dissolved.
Add soda to the resulting mass.
Stir.
Add the egg and yolk.
Mix everything well until smooth.
Pour the mixture into a bowl.
Add the sifted flour in several stages, mixing thoroughly each time.
When all the flour has been added, lightly knead the dough with your hands.
Then wrap it in cling film and put it in the refrigerator for at least 30 minutes.
We take the dough out of the refrigerator and roll it out.
We cut out gingerbread cookies from it using cookie cutters.
Place the gingerbread cookies on a parchment-lined baking sheet.
Bake for 5-7 minutes at 180 degrees.
Lightly beat the egg whites with a fork and add powdered sugar to it in small portions.
Mix everything until smooth.
Pour lemon juice into the protein mixture.
Mix well again.
Transfer the icing into a pastry bag and decorate the gingerbread cookies.
Delicious, aromatic and simply charming gingerbread cookies are ready.
