Nuts are one of the most beloved treats from childhood, which many mothers and grandmothers prepared for the holidays with their own hands.
We've previously told you how to prepare it at home:
- traditional dough made with water and butter;
- an inexpensive version of nut dough with margarine;
- various filling options for nuts.
Today we'll add to the list a simple step-by-step recipe "from grandma" for making incredibly delicious, fluffy, and crunchy kefir nuts at home.
You can fill fried nuts made from dough with kefir with any filling:
- condensed milk;
- cream cheese;
- Raffaello cream (with coconut flakes);
- custard;
- mass based on dark, milk or white chocolate.
Our kefir nut recipe will be complemented with a classic condensed milk cream, as this delicious version is familiar to most people from childhood.

In a mixing bowl, combine 200 grams of softened butter and 50 grams of sugar. Mix until smooth.
Add 1 egg (white and yolk) and kefir to the grated butter. Mix everything thoroughly until smooth.
First, combine the pre-sifted flour with the baking powder and mix, then add it to the liquid base and knead the dough.
You can let the finished dough rest for a while (10-15 minutes). But if you're in a hurry, you can skip this step.
Knead the dough again thoroughly, form into sausages, and cut into pieces of the desired size. For a standard nutcracker, 15-gram pieces are suitable, but you should consider the specifics of your machine.
We bake the halves using a classic nutcracker (heated on gas) or its more convenient modern electric equivalent.
Next, we trim off the excess dough that often forms along the edges of the shells.
You can also add crushed crispy dough to the cream if desired. It will be very tasty.
All that remains is to fill the shell halves with cream and join them together, hiding a walnut slice, a whole hazelnut or cashew in the center.
