Oatmeal cookies without eggs and milk

Rinse the dried fruit and cover with hot water. Instead of the apples used in the recipe, you can use any other dried fruit or berries: cranberries, raisins, pears, etc. You can also omit the additives altogether.
Place the oats in a blender and blend until smooth. I highly recommend using long-cooking rolled oats rather than buying pre-ground oats that cook in 5 minutes. Regular oats retain the most nutrients and vitamins.
Place the ground flakes in a deep bowl and add salt, cinnamon, and vanilla. Stir. You can adjust the amount and type of spices to your liking.
Pour the swollen dried fruits into a blender bowl and grind.
Do not drain the remaining water, but add it to the blender along with the apples.
Place the chopped apples in a saucepan, add sugar, honey, and vegetable oil. Stir.
Place the saucepan on the stove and heat until the mixture begins to bubble. When it begins to boil, add the baking soda.
Combine both mixtures and stir.
Add flour. Be sure to sift the flour: this will make the baked goods more porous, they'll rise better, and the flour won't form lumps.
The finished dough will be soft and elastic. Form thin circles with your hands and place them on a parchment-lined baking sheet.
Bake at 180 degrees Celsius for 20 minutes. During this time, the cookies will brown and rise slightly.
