These classic Lenten oatmeal cookies are delicious and healthy. Dried fruits and nuts add a unique touch to the delicate and delicious dough. A great snack idea for a child at school.

Grind oatmeal in a blender.
Chop the walnuts with a knife.
Cut the dried apricots into small cubes.
Prepare the syrup in a double boiler. Combine the sugar, honey, and water. Stir the ingredients until the sugar and honey are completely dissolved.
Add baking soda to the syrup. Heat the mixture until white foam appears on the surface.
Remove the syrup from the water bath. Add the oats a little at a time. Pour in the vegetable oil as you go.
Add dried apricots and nuts to the dough. Mix thoroughly. Refrigerate for 30-60 minutes.
Form the dough into flat patties. Place them on a parchment-lined baking sheet. Bake in a preheated oven at 200 degrees Celsius for 15–20 minutes.
Lenten oatmeal cookies for tea are ready.
