In such cases, pancakes made with wheat flour, semolina, and other gluten-rich products are strictly prohibited. Peel two large ripe bananas and blend them using an immersion blender.
Beat 2 eggs (yolks + whites) into the bananas and mix until smooth.
Add 1 heaping tablespoon of protein to the base.
Add 300 ml of milk and whisk until you get a liquid, homogeneous dough, like for pancakes.
Add 1 tablespoon of olive oil to the prepared dough and knead until smooth. If you don't have olive oil, you can use any vegetable oil.
Fry the pancakes in a frying pan, turning them over as they brown.
Stack the finished pancakes and decorate as desired. This healthy treat pairs perfectly with any fresh fruit and berries, honey, banana slices, nuts, and any other healthy toppings.
