First, separate the egg yolks and whites into separate bowls. We'll need them to make the dough, but we'll use the yolks to make the base and beat the whites into a stiff peak.
Beat the yolks with sugar and 10 grams of vanilla sugar (or a pinch of vanillin) with a mixer until smooth, lighter in color, and larger in volume.
Add a glass of warm (not hot) milk to the egg base and beat with a mixer until smooth.
Add sifted flour to the base and mix with a mixer until a homogeneous and fairly liquid dough is formed.
When the mixture is ready, add 4 tablespoons of vegetable oil and beat a little more until smooth.
Add a pinch of salt to the egg whites and beat until a thick, dense foam forms, as shown in the photo.
Fold the whipped egg whites into the base and gently stir the mixture with a spatula or spoon until smooth. Don't use a mixer at this stage, otherwise the foam will settle, resulting in a dense, non-porous dough.
The recipe is extremely simple: just fry the pancakes in a frying pan using a dough prepared without baking powder or soda.
Pancakes cook very quickly. Just a couple of minutes after adding the batter to the pan, bubbles will begin to appear and the bottom will brown. At this point, flip the pancake.
Fry the pancake on the other side and remove it from the pan, arranging it in a nice stack.
All that's left to do is decorate the treat and serve this delicious and healthy version of homemade American pancakes.
