Yes, it's more than possible. There's another simple yet highly effective option for creating a fluffy, airy dough: a meringue base (a dense, airy foam made by whisking egg whites with sugar). We'll explore this method in more detail today.
The recipe itself is quite simple and will only take 10-15 minutes to complete. The recipe yields 2 servings (8 pancakes). If you need to make more pancakes, simply increase the ingredients proportionally.

Let's start making our no-baking-powder pancakes by preparing the meringue. To do this, separate the yolks from the whites.
Beat the yolk with a whisk until smooth.
Add 20 ml of milk to the yolk base and stir until smooth.
Add vanilla sugar and 30 grams of sifted flour to the mixture and stir.
The base for the dough should not be too thick, but rather runny, otherwise it will be difficult to combine it with the meringue.
Now let's make the fluffy meringue. To do this, add salt to the egg whites and beat them with a mixer until soft peaks form. Then, gradually add 20 grams of sugar, continuing to beat until a thick texture forms, as shown in the photo.
Next, combine the egg white and yolk mixture. Use a spatula to fold the meringue into the batter using circular motions.
When half of the meringue has been incorporated into the yolk base, the mixture can be added to the egg white and the dough mixing process can be completed.
It is best to fry pancakes in a dry non-stick frying pan without using vegetable oil.
After laying out the pancakes, it is better to cover them with a lid, so the pancakes will turn out as fluffy as possible.
Pancakes cook for just a couple of minutes on each side, so you can prepare this treat even when guests are already on the doorstep.
All that's left to do is stack the finished pancakes like a cake, drizzle with honey, chocolate or condensed milk, and decorate to your taste.
