Our recipe calls for making homemade pancakes with traditional sour milk, so we'll be making the batter with a small amount of baking soda and baking powder. However, you can make similar pancakes with snow or yogurt by substituting baking powder for the baking soda.

Let's start making our fluffy pancakes by adding 2/3 teaspoon of baking soda to a cup of sour milk, stirring well, and letting it react. The sour milk base will foam and expand in volume.
While the baking soda is dissolving, break 2 eggs (yolks + whites) into a bowl, add a pinch of salt, classic sugar + vanilla sugar and beat with a whisk until a fluffy, homogeneous mass is obtained.
Regardless of whether you prepare the egg base with a whisk or a mixer, you will get the result as in the photo (the yolk prevents the mixture from acquiring the fluffy texture of a meringue).
Pour sour milk into the egg base and mix well.
Add 2 tablespoons of vegetable oil. This will allow us to fry the pancakes in the pan without the need for additional oiling.
Sift the flour and combine with the baking powder before adding to the dough.
Gradually add the dry mixture to the liquid base, gradually kneading the dough. The consistency should be medium, allowing the dough to be spooned into the pan without spreading too much.
Next, heat the frying pan and begin frying the pancakes, frying each pancake on both sides until a beautiful golden brown crust forms.
A non-stick pan doesn't need any greasing at all. For standard uncoated pans, it's best to lightly oil them with vegetable oil before adding the first pancake.
All that's left to do is arrange the homemade pancakes in a beautiful pile and decorate them to your liking with banana, fresh berries, honey, condensed milk, jam, or any ready-made store-bought topping.
