Ryazhenka is the recipe's secret ingredient, as it has several significant differences from other fermented milk bases used in pancake batter. Due to the specific preparation process, ryazhenka possesses:

- homogeneous creamy base;
- not high acidity.

Before you begin kneading the dough, the ryazhenka needs to be warmed up slightly. It's best to remove all ingredients from the refrigerator ahead of time so they're at approximately the same temperature and not cold.
Next, pour a cup of fermented baked milk into a mixing bowl, add a pinch of salt, 1.5 tablespoons of sugar, 2 eggs, and vanilla sugar. Mix everything thoroughly with a whisk until smooth.
Mix flour with baking powder and sift into the liquid base.
When the dough becomes homogeneous, add 2 tablespoons of vegetable oil and knead well again.
Fry the pancakes in a well-heated frying pan without adding oil. Use a low-medium heat setting, but adjust the heat according to your technique so the pancakes are cooked through but not burnt.
Each pancake must be fried on both sides until golden brown, as in the photo.
