The history of rolled oatmeal cookies, familiar to everyone from childhood, goes back a long way, as the first recipe for Scottish oatcakes was described as early as the 1360s. Typically, the classic version of these cookies takes the form of round or oval cakes, as pictured.
Over the years, chefs have adapted this ancient recipe to suit the local cuisine and the needs of the population, so today you can find a wide variety of oatmeal cookies made from rolled oats:
- soft or crispy;
- with the addition of raisins, apples, bananas and other fruits or berries;
- pumpkin or "tykviki" (with grated pumpkin or pieces of candied fruit);
- with the addition of cottage cheese;
- with chocolate inclusions, nuts or coconut flakes;
- with various sprinkles (most often sesame or grated nuts);
- Lenten and dietary (for those who follow a healthy diet, diabetics and people with gluten intolerance).

- make cookies without any sugar at all, using honey or 5 grams of sugar substitute;

Let's start preparing the dough by creaming the softened butter with sugar. You can also add a little vanilla sugar at this stage.
Add the egg (white + yolk) to the grated butter, add salt and mix until it is as smooth as possible.
Add 120 grams of fine rolled oats, 60 grams of wheat or oat flour (you can simply grind 60 grams of rolled oats), and baking powder to the mixture. Mix thoroughly until smooth.
At this stage, you can add the following to the dough if desired:
- fresh lemon or orange zest;
- cinnamon;
- crushed nuts and any other additives.
Add the apple, diced into small cubes. Knead the dough with your hands until all the ingredients are evenly distributed.
The next step is shaping the cookies. One tablespoon of dough is enough for one cookie. Roll the dough into a ball, press it firmly, and then flatten it.
Place the blanks on a baking sheet covered with parchment paper.
Bake the cookies for approximately 15-20 minutes at 180℃ until golden brown.
