Preparation

Step 1

Mix cottage cheese and room temperature butter cut into pieces using an immersion blender.

Step 2

Add flour and baking powder little by little and combine everything first with a spoon, then knead with your hands to obtain a homogeneous and smooth dough.

Step 3

Form the dough into a ball and place it in plastic wrap or a regular bag. Seal tightly and refrigerate for 30-40 minutes to chill.

Step 4

Line a baking sheet with parchment paper and grease it with a thin layer of butter to prevent the triangles from sticking. Then roll out the dough into a thin sheet, about 3-5 mm thick. Cut out circles 8-10 cm in diameter using a glass or cookie cutter.

Step 5

Place sugar on a flat plate and dip one dough circle into it at a time. Fold in half, breaded side inward. Then dip in sugar again and fold again.

Step 6

Once ready, place the curd triangles on a baking sheet. Make sure to leave about 1-2 cm of space between them, as the dough will rise and expand during baking.

Step 7

Bake the cookies in an oven preheated to 200 degrees for 10-15 minutes until they have a nice brown crust.

Step 8

The Goose Feet Curd Triangles are ready. Transfer them to a serving platter and serve. They'll cool fairly quickly, so you can try them almost immediately after removing them from the baking sheet.

The Right Houndstooth Decor
The recipe for "Goose Feet" is no different from other curd triangles or envelopes. However, you can add some decoration to make them a more interesting dessert. To do this, simply make two cuts on the wide part of the triangle to create the characteristic webbing, like a goose's feet.
Don't knead the dough for too long.
Over-kneading shortcrust pastry activates the gluten in the flour. This makes it harder and denser. This isn't what you want. Instead, the goosefoot base needs to be combined as quickly as possible. Once it's smooth, immediately refrigerate to chill.
