Mix cottage cheese and room temperature butter cut into pieces using an immersion blender.
Add flour and baking powder little by little and combine everything first with a spoon, then knead with your hands to obtain a homogeneous and smooth dough.
Form the dough into a ball and place it in plastic wrap or a regular bag. Seal tightly and refrigerate for 30-40 minutes to chill.
Line a baking sheet with parchment paper and grease it with a thin layer of butter to prevent the triangles from sticking. Then roll out the dough into a thin sheet, about 3-5 mm thick. Cut out circles 8-10 cm in diameter using a glass or cookie cutter.
Place sugar on a flat plate and dip one dough circle into it at a time. Fold in half, breaded side inward. Then dip in sugar again and fold again.
Once ready, place the curd triangles on a baking sheet. Make sure to leave about 1-2 cm of space between them, as the dough will rise and expand during baking.
Bake the cookies in an oven preheated to 200 degrees for 10-15 minutes until they have a nice brown crust.
