Crispy, crumbly Kokosanka cookies are small balls made from dough made with natural coconut flakes.

It's not known for certain who invented the Kokosanka recipe or when. Most likely, the idea of ​​adding dried coconut pulp to the recipe originated in a European country around the last century, when the exotic coconut became available to local confectioners. Coconut cookies are especially popular in Belgium (there are even special Belgian recipes for this traditional delicacy). Kokosanka is also loved in France, where they call this dessert Macaroons. Making Kokosanka cookies begins with preparing the sweet egg base. To do this, crack two large eggs (whites and yolks) into a mixing bowl, add 80-100 grams of sugar, and beat thoroughly with a whisk or mixer.

Beat until fluffy and completely dissolved. However, don't try to significantly increase the volume or density of the mixture, as this won't happen by whisking the egg whites and yolk together, and it's not needed in this recipe.

Gradually add coconut flakes to the egg mixture. The exact amount needed depends on the volume of the eggs (170 to 200 grams may be needed).

However, you shouldn't overload the dough with coconut, otherwise it will turn out too dry and it will be difficult to form a cake out of it.
If you love the combination of chocolate and coconut, you can add cocoa powder to the dough at this step, and you'll get delicious chocolate-coconut balls.

At the final stage, knead the mixture thoroughly with your hands. The result should be a dough like the one in the photo, easily shaped into round cookies.

Place the blanks on a baking sheet lined with parchment paper or a silicone mat.

We bake 20-25 minutes at 180℃ in the "top-bottom" mode without convection.
