It's not known for certain who invented the Kokosanka recipe or when. Most likely, the idea of adding dried coconut pulp to the recipe originated in a European country around the last century, when the exotic coconut became available to local confectioners. Coconut cookies are especially popular in Belgium (there are even special Belgian recipes for this traditional delicacy). Kokosanka is also loved in France, where they call this dessert Macaroons. Don't confuse it with macarons, the preparation of which we also talked about earlier.

Making Kokosanka cookies begins with preparing the sweet egg base. To do this, crack two large eggs (whites and yolks) into a mixing bowl, add 80-100 grams of sugar, and beat thoroughly with a whisk or mixer.
Gradually add coconut flakes to the egg mixture. The exact amount needed depends on the volume of the eggs (170 to 200 grams may be needed).
At the final stage, knead the mixture thoroughly with your hands. The result should be a dough like the one in the photo, easily shaped into round cookies.
Place the blanks on a baking sheet lined with parchment paper or a silicone mat.
The finished coconut cookies should have a slightly golden brown appearance, as in the photo.
