Historians believe the first shortbread cookie recipes were invented by Scottish pastry chefs around the mid-16th century. The baking of exquisite coconut cookies began much later, when European cooks became familiar with the exotic ingredient coconut flour, and recipes for well-known dishes began to adapt to new culinary trends.

The recipe with the addition of coconut flour gained particular popularity in Belgium, which is why in many countries they are known as “Belgian coconut cookies.”

In a mixing bowl, combine soft butter, regular sugar (+ a packet of vanilla sugar) and a pinch of salt.

Mix the ingredients thoroughly using a mixer or mash with a fork.

Add 2 eggs (white + yolk) into the mixture one at a time, thoroughly mixing the butter base with the egg each time until smooth.

Add 100 grams of coconut flakes to the dough and mix until evenly distributed (you can mix with a spatula or fork).

You can use any colored shavings instead of the white ones shown in the photo. This will make the cookies even more unique, and the dish will look bright and festive. Coconut cookies with green, red, purple, and even multicolored shavings look very unique.

In a separate container, mix 180 grams of flour and 5 grams of baking powder (a full teaspoon).

Add the dry mixture to the base in parts, kneading a soft, but at the same time fairly dense dough.

Depending on the number of eggs, you may need 180-200 grams of flour. If the dough seems too runny after adding all the mixture, you can add a little more non-baking powder flour. Be careful not to make the dough too stiff, or the cookies will turn out tough.

All that's left to do is make the cookies into a beautiful round shape. To do this, roll the dough on a floured base into a sausage shape (as shown in the photo).

Using a spatula, divide the sausage into 24 equal-sized pieces.

Roll each piece between your palms, compacting and forming a ball, as shown in the photo.
