But the base is usually a classic shortcrust pastry with butter, a simple step-by-step recipe for which we'd like to share on this page. These classic coconut cookies are quick and easy to make, so even a novice cook can easily make them.

Historians believe the first shortbread cookie recipes were invented by Scottish pastry chefs around the mid-16th century. The baking of exquisite coconut cookies began much later, when European cooks became familiar with the exotic ingredient coconut flour, and recipes for well-known dishes began to adapt to new culinary trends.
Homemade coconut cookies can be made with either coconut flour or coconut flakes:

You can find similar cookies in the Chshkino range, but it's much more fun to make classic coconut cookies yourself, using a recipe using coconut flakes. All the necessary ingredients can be found at home or at your local VkusVill store, and the preparation process is very simple and doesn't require expensive appliances.

In a mixing bowl, combine soft butter, regular sugar (+ a packet of vanilla sugar) and a pinch of salt.
Mix the ingredients thoroughly using a mixer or mash with a fork.
Add 2 eggs (white + yolk) into the mixture one at a time, thoroughly mixing the butter base with the egg each time until smooth.
Add 100 grams of coconut flakes to the dough and mix until evenly distributed (you can mix with a spatula or fork).
In a separate container, mix 180 grams of flour and 5 grams of baking powder (a full teaspoon).
Add the dry mixture to the base in parts, kneading a soft, but at the same time fairly dense dough.
All that's left to do is make the cookies into a beautiful round shape. To do this, roll the dough on a floured base into a sausage shape (as shown in the photo).
Using a spatula, divide the sausage into 24 equal-sized pieces.
Roll each piece between your palms, compacting and forming a ball, as shown in the photo.
Place the dough pieces on a baking sheet lined with parchment paper or a silicone mat, leaving enough space for them to rise in size.
Cooking times on other modes may vary (as with charlotte and any other baked goods). Also, consider the operating characteristics of your oven.
The finished coconut cookies should have a beautiful golden hue and characteristic cracks on the surface.
