Tuile cookies are sweet, thin, almond-flavored cookies that snap when bitten into with a distinctive, crisp sound. The classic French recipe calls for garnishing the cookies with almond flakes, but many home-brewers add almond flour to the dough and sprinkle the finished cookies with sesame seeds or even pumpkin seeds.

We begin preparing the dough by sifting the powdered sugar through a sieve. This is an important step to remove any small lumps that form during storage.
Next, separate 2 egg whites, making sure not to include even the slightest amount of yolk, add a pinch of salt and beat with a mixer until a “beer” foam forms.
Gradually add sifted powdered sugar into the egg mixture, continuing to beat vigorously with a mixer until a thick, stable foam forms.
Add vanilla extract or vanilla sugar.
Add pre-sifted wheat flour to the protein mixture.
Add melted butter to the dough and beat a little more with a mixer until smooth.
As a result, you should get a fairly liquid dough like the one in the photo, with a consistency similar to pancake batter.
Rub baking paper with butter.
Place 1 teaspoon of dough and use a spoon to form a circle of the desired diameter, simply spreading the dough onto the paper in a circular motion.
Place almonds on top (or other nut decorations if desired).
While still hot, carefully remove the cookies from the baking sheet and place them on a rolling pin to give them a characteristic curve.
Place the cookies on a plate and add some beautiful decoration if desired.
