Preparation

Step 1

Mash the butter with a fork, add both types of sugar, and a pinch of salt. Add the cottage cheese and mix well with a fork until smooth and fluffy. This will be much easier if the butter is warm.

Sift the flour and baking powder together until they're aerated and well-combined. Add them to the curd mixture, a little at a time, and knead the dough. Finally, add the milk and continue kneading. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for half an hour.

Step 3

Roll out the rested dough on a floured surface into a thin rectangular layer and cut into 16 squares.

Step 4

Place 1 teaspoon of filling on each square, moisten the edges with milk using a pastry brush. Fold in half to form a triangle and seal the edges with the tines of a fork.

Step 5

When ready, place the curd triangles on a baking sheet lined with parchment paper or a silicone mat.

Bake the cookies in an oven preheated to 180 degrees for 25 minutes.
