In the homeland, this dish is prepared on the basis of shortbread, puff pastry, or yeast dough. The filling can also be very varied. Cheese tart is made with cottage cheese, soft cream cheese, or ricotta, as well as various hard or semi-hard cheeses. Depending on the filling chosen, the pie can be:
- sweet – then apples, pears or various berries are added to it;
- salty – then the recipe uses salty cheeses in combination with greens (most often spinach).
Recommendations:
- pears should be juicy, firm (not soft);
- If the pear is not sweet, add more sugar to the recipe;
- sugar can also be replaced with honey, it will also be very tasty;
- It is better to use fresh rosemary rather than dried (this is a highlight of many French recipes);
- Dor Blue cheese can be replaced with another variety, but only with blue (light blue) mold: Gorgonzola, Cabral, Cambozola, Dana Blue, d'Ambert, Bergader, Stilton, Saint-Agur, Parsifal, Bavarian blue cheese, etc. (varieties with white mold are less aromatic and the result will differ from what is expected).

Store-bought frozen puff pastry needs to be defrosted. It's best to refrigerate it beforehand, but if you don't have time for a long, gradual defrosting, proper defrosting No, then just remove the dough from the package and place it on a rolling mat for 15-20 minutes.
Once the pastry sheet is completely defrosted, mark the inside of the pie where the filling will be. To do this, use a knife to make small cuts, leaving a 1-1.5 cm border (as shown in the photo). You don't need to cut all the way through the pastry; just cut halfway through.
Cut the pears into thin slices, first cutting them into 4 parts and removing the core and seeds.

The edges of the dough can be coated with beaten egg yolk, then they will acquire a beautiful golden hue when baked.
Bake the puff pastry pie with cheese in the oven for 15-20 minutes at 180℃.
