Let's start making this quick pie by whipping the egg whites. Crack 3 eggs (whites and yolks) into a bowl, add 100 grams of sugar, a packet of vanilla sugar (optional), and a pinch of salt. Beat with a mixer until the mixture becomes lighter and thicker.
Add 80 grams of vegetable oil (odorless) and 50 grams of kefir (any fat content) to the mixture.
Mix flour with baking powder and sift into the mixture in 1 step.
Mix the dough with a mixer.
Add berries (we used frozen pitted cherries, but you can use absolutely any fresh or frozen berries to your taste).
Simply remove the frozen berries from the freezer, add 1 teaspoon of starch, and mix thoroughly to coat each berry. The starch coating will prevent the berries from sinking to the bottom during baking, and the filling will be evenly distributed throughout the entire thickness of the pie.
Pour the berries into the dough and mix with a silicone spatula.
Place the dough into a prepared pan with a diameter of 20 cm.
After letting the pie sit in the pan for about 5 minutes, carefully remove it, transfer it to a serving dish and sprinkle with powdered sugar.
