Next, in a saucepan, combine 150 grams of cherries, 30 grams of regular sugar, 1 teaspoon (8 grams) of cornstarch, and about 1-2 tablespoons of water (or cherry juice). Stir the mixture and bring to a boil over low heat, then simmer for 2-3 minutes.
Remove the saucepan from the heat, transfer the cherry filling into a small bowl, cover with cling film and let the jam cool naturally.
To prepare the gelling base for the chocolate mousse, dissolve 9 grams of 220 bloom strength gelatin in 2 tablespoons of water.
Next, you need to melt 180 grams of chocolate and 30 grams of butter in the microwave using short pulses (or in a water bath).
It is necessary to make a smooth, homogeneous emulsion, as in the photo.
Add gelatin to the pre-prepared, still warm chocolate and mix thoroughly until completely dissolved.
Whip well-chilled cream until soft peaks form.
Combine the chocolate base and whipped cream and mix with a spatula until smooth.
We shape the cake using a mold. First, add a layer of mousse, then a little cherry filling, and then another layer of mousse on top.
Once all the cells are filled, insert chocolate sticks into the mousse blanks, as shown in the photo, and place in the freezer for 4-6 hours.
The final stage is the coating, which will make our chocolate popsicle incredibly delicious and festive.
To prepare the glaze for the coating, melt 250 grams of chocolate and mix it with 1 tablespoon of refined vegetable oil.
Remove the frozen popsicles from the mold.
It is also necessary to immediately prepare everything needed for decorating the cakes, since the chocolate glaze will harden very quickly on a cooled surface.
Next, dip each piece into the glaze, let the excess mixture drip back into the glass, and immediately sprinkle with white chocolate shavings or nuts.
All that's left to do is put the popsicle in the freezer for 2 hours and the delicious homemade dessert is ready!
