Yeast-free kefir donuts

These fluffy donuts are incredibly quick to make. Simply mix all the ingredients together, form the donuts immediately, and then bake them. They'll be incredibly fluffy, tender, and irresistibly delicious.

Because the dessert is baked in the oven, the sweets turn out special, with a soft interior and a crispy exterior. After baking, you can decorate them with chocolate or sugar glaze to make them even more appetizing. But even dusted with powdered sugar, they'll be fragrant and gobbled up in minutes.

Fluffy donuts with kefir and no yeast baked in the oven

Preparation

Step 1

In a mixer bowl, crack an egg, add a pinch of salt, and sugar. Beat at maximum speed until the mixture is creamy and doubles or triples in size.

Step 2

Add baking soda to warm kefir and mix well, leave for 2-3 minutes so that the ingredients begin to interact with each other.

Step 3

Sift the flour into a deep bowl, add the baking powder and mix well until it is evenly distributed.

Step 4

Reduce the mixer speed to medium and pour the kefir mixture into the egg mixture.

Step 5

Add flour a little at a time, continuing to whisk. When the dough begins to thicken, stir it with a spoon. If your stand mixer is powerful enough and you have a dough hook, simply wait until the dough comes together completely.

Step 6

Transfer the resulting dough to a floured work surface. Knead by hand for about 10 minutes until it becomes softer and more pliable.

Step 7

Roll out the resulting dough into a layer about 5-7 mm thick using a rolling pin.

Step 8

Use a glass and bottle cap, cookie cutters, or special plungers to cut out donuts. Once ready, place them on a parchment-lined baking sheet.

Bake the donuts in an oven preheated to 170-180 degrees for about 15-20 minutes until done.

The yeast-free kefir donuts are ready. Let them cool until warm and, if desired, decorate with powdered sugar and berries.

An alternative to eggs
If you're out of eggs but still want to make a soft dough, replace them with 50 g of yogurt or fruit juice. Or use 1 tablespoon of potato starch, which has similar binding properties.
Storing Homemade Donuts
Store cooled donuts in an airtight container for 3-4 days if you haven't eaten them in one day. Microwave them before serving to restore their softness and flavor.
