Donuts with sour milk

Sour milk can be used in baking because it doesn't spoil the flavor of the dough. And if you add a pinch of baking soda, you can forget about baking powder. This recipe makes delicious donuts from sour milk, which can be fried in a pan or baked in the oven.

You can use regular powdered sugar or icing to decorate the donuts. The dough is neutral and almost not sweet, so any toppings and flavors are welcome. You can sprinkle chopped candied fruit, coconut, nuts, or sprinkles on top of the icing.

Preparation

Step 1

Pour sour milk into a bowl, add baking soda and stir quickly.

Step 2

Add the egg and sugar and mix until you get a smooth, creamy mixture.

Step 3

Pour in refined sunflower oil and mix until smooth.

Step 4

Sift the flour and add it in small portions, mixing well each time with a spoon.

Step 5

When the dough thickens, sprinkle the remaining flour onto a work surface and knead the dough for about 5-10 minutes. Once the dough is smooth, soft, and homogeneous, form it into a ball.

Step 6

Roll the dough out to a thickness of about 1.5 cm using a rolling pin. Cut out donuts using cookie cutters measuring 8 cm and 2-3 cm in diameter. If you don't have special tools, use a suitable-sized mug for larger rings and a plastic bottle cap for smaller circles.

Step 7

Heat the sunflower oil over medium heat and drop it into the pan. Fry the donuts until golden brown around the bottom, then flip them with a fork. Fry for another 1-2 minutes.

Step 8

When ready, remove the donuts with one or two forks and place them on sheets of paper towel.

Step 9

When the sour milk donuts are ready, place them in layers on a wide plate and sprinkle with powdered sugar using a sieve.

Making milk sour
You can use buttermilk for this recipe. To make it, add 1-2 teaspoons of lemon juice to fresh milk and let it sit in a warm place for 30 minutes. During this time, the citrus acids will sour it. This life hack will come in handy if you like donuts made with sour milk better than those made with fresh milk. After all, they are truly delicious and incredibly tender.
Alternative to milk
Sour milk, when treated with baking soda, expands significantly, allowing you to make a lower-fat, lower-calorie dough. Yogurt, sour cream, and other fermented milk products can also be used instead. However, if you use fermented baked milk, be sure to add vinegar or lemon juice. Baking soda alone won't neutralize the baking soda.
