And how wonderful that you can make healthy donuts using a simple recipe without sugar, fat, or gluten. And you'll get the same delicate and beautiful dessert as in the photo.

To maintain a healthy diet, you should definitely avoid deep-frying. However, an oven is perfectly capable of baking donuts. The only thing you'll need is a special silicone mold to create beautiful rings.

If you prefer, you can use this recipe to make donuts in a waffle iron, or just make regular cupcakes with frosting if you're too lazy to find a mold. The result will be just as delicious and just as healthy.

Sugar-free donuts baked in the oven

  • Banana
    1 pcs
  • Egg C1
    2 pcs
  • Kefir
    3 tbsp
  • Baking powder
    3 G
  • Corn flour
    1 tsp
  • Sweetener
    to taste
For the glaze:
  • Dry milk
    1 tbsp
  • Strawberry juice
    1 tsp
  • Milk
    1 tsp
Preparation

Step 1

Mash the peeled banana into puree using a fork or masher.

Step 2

Separate the whites from the yolks and add them to the banana mixture along with the kefir. Blend again until smooth and homogeneous.

Step 3

Add corn flour and baking powder, mix everything with a whisk.

Step 4

Beat the egg whites at room temperature until stiff peaks form, add them to the batter and gently mix from the bottom up so that it is evenly distributed.

Step 5

Transfer the dough into a pastry bag with a smooth tip and place it into a silicone mold.

Step 6

Bake in a preheated oven at 180 degrees Celsius for about 10-15 minutes, until golden brown. In a multi-baker, the process will take about 5-7 minutes.

Step 7

In a small bowl, mix all the glaze ingredients with a fork until smooth. If you'd like to make a second type of glaze, combine the milk and white chocolate, melted in the microwave beforehand.

Step 8

The PP donuts are ready. Dip them in the glaze and place them on a serving platter. Decorate with sprinkles, coconut flakes, chopped nuts, or dried fruit, if desired.

In a diet recipe, it's important to adjust the amount of sweetener depending on the type being used. For example, if you're using erythritol, 1.5 tablespoons is sufficient, while stevia requires much less. Use your own taste.
Donut flour
As for flour, you can use any gluten-free flour: oat, rice, or buckwheat, depending on what you have at home. But be careful with nut flours. Almond and pistachio flours don't hold their shape well, and coconut flour absorbs a lot of moisture and should be used in a third of the amount. It's best to dilute these flours with other flours.
Please note!
You don't need to buy fresh strawberries to make strawberry juice. Simply defrost refrigerated strawberries and collect the juice that comes out during thawing. It's best to add the juice gradually, adjusting the amount of liquid in the glaze. It's important that it's not too runny or too thick.
