In a mixing bowl, combine 50 grams of sour cream, 2 eggs (use both whites and yolks), a pinch of salt, any sweetener you usually use, and 1 gram of vanilla (on the tip of a knife). Mix the ingredients thoroughly.
Add 35 grams of soy flour and mix the dough with a whisk (it will be as thick as pancakes).
Heat the nut pan to operating temperature and grease with vegetable oil if necessary (depending on your coating, but it is better to grease it, since there is quite little fat in the dough itself).
We spoon out the liquid dough, measuring out the required amount in each well, close the device and bake our healthy nuts in the nut baker for about 3-5 minutes (the time may vary depending on the characteristics of the device).
We remove the finished halves onto a plate and repeat the procedure until the dough runs out.
Trim off any excess dough that forms around the edges during baking with scissors and crush it. This will create delicious, crispy pieces that will feel like nuts in the filling.
In a separate bowl, mix together the diabetic condensed milk, currants, and crushed cookie pieces. No need to sweeten the filling.
We fill each half, connect them in pairs and arrange them beautifully on a plate.
