PP Savoyardi without sugar

Tiramisu doesn't have to be very fatty. There are diet-friendly versions of this Italian dessert. However, for these, it's best to also make healthy savoiardi to completely eliminate the sugar and gluten from the recipe. This is easy if you have erythritol and oat flour on hand.

Preparation

Step 1

Separate the whites from the yolks. Pour them into a clean, grease-free bowl. Be sure not to let any yolk get inside, otherwise the mixture won't whip.

Step 2

Beat the egg whites until stiff peaks form, gradually adding the ground erythritol. Then sift the oat flour into the egg whites, one tablespoon at a time, and fold with a spatula until combined.

Step 3

Transfer the dough into a pastry bag. Pipe savoiardi shapes onto a baking sheet.

Step 4

Bake the cookies at 180 degrees until done.

Making flour yourself
If you don't have oat flour, you can grind it at home using rolled oats in a coffee grinder. To ensure a fine powder without large particles, gradually sift the ground portions through a fine sieve, then return the remaining oats to the grinder and grind again.
