Today, we'll tell you how to make a delicious chocolate-flavored fondant at home without sugar, gluten, lactose, or eggs, and offer a step-by-step recipe with photos of each step.

PP fondant is a great treat for those who are gluten intolerant, suffer from various food allergies to ingredients excluded from the dessert recipe, as well as for anyone who simply tries to eat healthy, monitor their weight, and control their calorie intake.
Of course, you won't find this dessert on the menu of your average coffee shop or restaurant, but preparing this treat at home takes less than 10 minutes, and children and guests will be delighted with the amazing taste of this cake, which is close to a moist version of everyone's favorite brownie cake.
To prepare a healthy chocolate fondant, we will need:
- a muffin pan (ceramic or silicone is fine), but if you don't have one, you can prepare individual portions of chocolate dessert in a small salad bowl or cup, since we won't be baking it in the oven, but simply in the microwave;
- a mold for freezing the chocolate center (it should be smaller than the main mold);
- a small container for mixing dry ingredients;
- spoon for mixing dough.

Preliminary stage!
Chocolate is the main ingredient in our cake, so let's start with that. Chop 15 grams of high-quality dark chocolate and pour it into a mold, as shown in the photo.
Pour warm rice milk over the chocolate and stir vigorously until the chocolate melts. You should have a smooth chocolate mixture.
Instead of rice milk, you can use brewed coffee. This will give your cake a unique coffee flavor.
If necessary, you can further warm the mold in the microwave to the desired temperature. Usually, 10 seconds of heating is enough to begin melting the chocolate more rapidly.
Pour the chocolate mixture into a silicone mold to prepare the filling and place in the freezer until completely frozen.
If you don't have a special mold like the one in the photo, you can use regular ice cube trays or even freeze the chocolate in a deep measuring spoon.
The chocolate ice will take about 5 hours to freeze, so it's best to do this preparatory step in advance, so that when you're ready to make the fondant, you can simply take it out of the freezer.
The main stage!
Let's prepare the dough!
To do this, mix 1 tablespoon of ground flaxseed with 2 tablespoons of water and let the mixture sit for a while. This will create a "flax egg"—a mixture that will bind the dough together in place of the classic egg used in the basic fondant recipe.
You can replace ground flaxseed with flaxseed flour. This ingredient is available at health food stores.
When the flax egg has become jelly-like, add 2 tablespoons of coffee to it.
If you don't like the coffee flavor, you can also use rice milk at this stage.
We also add sweetener to the mixture and stir until the powder or tablet is completely dissolved.
The next step is to add 10 ml of coconut oil. Mix thoroughly until smooth.
The next step is adding dry ingredients to the dough, which will make our delicious healthy fondant: a tablespoon of rice flour, cocoa powder, and baking powder.
Mix the three ingredients in a separate bowl until smooth, then combine with the liquid component.
Mix the dough.
The result should be a thick mass with a consistency similar to pancake batter.
We take the frozen filling for our chocolate cake out of the freezer.
Place the frozen core in the center of our mold and deepen it so that the dough covers the ice with a thin layer.
Because our cake core is frozen, it won't harden during baking, and the filling will be soft and runny.
Microwave cooking takes approximately 2 minutes.
These parameters are valid for a microwave oven with a maximum power of 800W. If your microwave is weaker, you may need to cook the cake a little longer. It's best to open the door and monitor the cooking progress minute by minute the first time, but eventually you'll know how to make the perfect fondant, taking into account the characteristics of your appliance, and how to ensure the best possible crust.
The end result is an incredibly delicious healthy fondant, the recipe for which contains only healthy ingredients and a minimum of calories compared to other similar desserts.
You can also simply decorate the finished fondant with banana slices. It will look just as beautiful.
