Clear jam made from paradise apples with stems

Small, hard, and tart, paradise apples are not ideal for eating fresh. But they're the perfect ingredient for jam. They're vibrant and flavorful. If you manage to keep them intact during cooking, you'll create not just jam, but a true work of art.

Preparation

Step 1

Place the washed apples in a bowl, trim the stems with scissors and pierce the peel with a needle, a sharpened match or a skewer.

Step 2

Place the potatoes in a bowl and cover with hot water. Cook for about 5 minutes from the moment they come to a boil. Then drain through a colander and cover with cold water. This will help keep the skin firm and prevent cracking. Leave overnight, then drain in the morning.

Step 3

Place the sugar and water in a saucepan and heat over low heat until the sugar is completely dissolved. Stir occasionally with a spatula.

Step 4

Pour the syrup, cooled to room temperature, into a bowl with paradise apples.

Step 5

Cook over moderate heat for 10 minutes and leave to infuse until morning.

Step 6

Repeat the cooking procedure and remove the foam with paper towels so as not to remove too much syrup.

Step 7

Place the hot paradise apple jam into sterilized jars, seal, and turn upside down until completely cool. This will take overnight.

Pierce apples correctly
Only beautiful, smooth apples should float in the clear syrup. Piercing the apples with a toothpick helps preserve the skin and prevent it from cracking. You can pierce the apples from the side, but inserting the skewer through the stem is sufficient. This way, the hole will be completely invisible.
