For this recipe, it's best to choose the firmest and most tart Antonovka apples. They'll hold their shape better, and the natural acidity will balance the sweetness of the syrup. If the fruit is already ripe, you can add a little lemon juice to enhance the dessert's flavor.

Spices added to the jam are optional. These can include not only cinnamon and cloves, but also ginger, nutmeg, and star anise. However, even without them, the jam will be very tasty and aromatic. Furthermore, without the cinnamon, the color of the syrup and the cloves will definitely be lighter.

Preparation

Step 1

Prepare all the ingredients for making the jam. The spices must be whole so they can be removed from the jar at the end.

Step 2

Cut the apples into slices. Make sure they're not too thick, but thin, too. Sprinkle the slices with sugar and spices. Let them sit, covered, for 3 hours to release the juices.

Step 3

Place the apples on the stove without adding water. Bring to a boil and simmer for 5 minutes. Then turn off the heat and let steep, covered, for 3-4 hours to allow the apples to cool and soak in the syrup.

Step 4

Repeat the heating/cooling procedure 3-4 times.

Step 5

We roll transparent apple slices into jars and fill them with syrup.

Dry jam
After boiling the apple slices in syrup three times, you can turn them into candied fruit instead of canning them. Place the fruit in a sieve and let the syrup drain completely. Then dry them in the oven at 60 degrees Celsius (140 degrees Fahrenheit) and dust with powdered sugar. These candied fruits will keep on the shelf for at least a year, and the taste will be just as good as classic jam.
