In a saucepan, mix honey, sugar and spices.
Place the saucepan over low heat.
Stirring continuously, bring the mixture to a boil and remove from the stove after a minute.
Pour the hot spice mixture into a deep bowl, add baking soda and stir.
The mass should increase in volume.
Add butter.
Mix until smooth.
When the mixture has cooled to room temperature, add the egg to it.
Mix well.
Add flour in small portions, carefully mixing the mixture each time until smooth.
Knead a homogeneous, viscous dough.
Once all the flour has been added, knead the dough with your hands, wrap it in cling film and refrigerate for 30 minutes.
We take the dough out of the refrigerator, roll it out to a thickness of 4-5 mm and cut out figures.
Bake the gingerbread at 180 degrees for 10 minutes.
Prepare the glaze. Mix the powdered sugar with the egg white.
Add lemon juice and beat the mixture until fluffy.
Set aside a small amount of the icing for the outline. Use the remaining mixture to make a icing for the filling, adding 2 teaspoons of boiled water.
We color the icing in the desired colors and place it in pastry bags.
We make outlines on each gingerbread.
After this we fill in the drawing.
If desired, decorate the gingerbread with various patterns and sugar beads or sprinkles.
Let the decorated gingerbread cookies dry thoroughly at room temperature for a few hours. Then serve them or gift-box them.
