Combine the cottage cheese and egg in a bowl. I choose cottage cheese with 1.5% fat. You can choose a product with less or more fat. All ingredients should be at room temperature.
Add 1% kefir to ensure smoothness. While cottage cheese makes the dough looser, kefir will make it more uniform.
Vanilla or vanilla extract. Mix everything thoroughly.
In a separate bowl, combine the dry ingredients. I use three types of flour, which complement each other. Rice and corn flour are dietary, gluten-free, and healthy, while wheat flour gives the dough the right consistency.
Knead the dough. It should be elastic and smooth. After kneading, you can add a tablespoon of olive oil.
Roll out the dough into a rectangle or square 3–4 mm thick.
Cut triangles from the dough. Make a 1.5–2 cm cut along the wide edge.

Roll the croissants into shells. Place them on a baking sheet. Bake in an oven preheated to 180°C (350°F) for 25 minutes.
