Sugar syrup for soaking buns
This syrup is relatively inexpensive to make, and its taste is sweeter than regular sugar syrup, making it versatile. It can be used to soak buns and other desserts. Leftover syrup can also be added to tea, iced coffee, and other beverages.

Cut the lemon in half and squeeze out the juice, immediately filtering it through a sieve. Then measure out the required amount using a measuring cup.
Pour 300 ml of water into a wide saucepan, measure out 60 ml and set aside. Immediately add the lemon juice and mix everything with a spatula.
Add all the sugar and begin heating over low heat, stirring with a spatula until it is completely dissolved.
Continue cooking over moderate heat, maintaining a boil and stirring frequently with a spatula.
When the syrup reaches 127°C-128°C, it will thicken and begin to darken. Continue to simmer. If you don't have a kitchen thermometer, simply maintain a simmer over low heat.
At this stage, dissolve baking soda in 60 ml of water set aside and stir well until it dissolves.
Add the soda mixture to the syrup and stir until it is evenly distributed.
Remove the syrup from the heat and pour it into a suitable container. The soak is ready; it just needs to cool slightly before using it to soak the buns.
