Crack the eggs into a deep bowl, add sugar and a pinch of salt. Beat with a mixer until thick and fluffy. The more the eggs rise in volume, the fluffier the finished dessert will be.
Prepare the apples. Wash and core them. Then cut the fruit into thin slices.
Using a sieve, add flour to the dough and mix gently with a spatula so as not to disturb the airiness of the egg-sugar mixture.
Pour half of the dough into the pan and smooth it out well.
Place the apple slices on top of the dough, each slice overlapping the previous one slightly.
Pour the second portion of dough on top of the apples and smooth it out with a spatula.
Place another layer of apples on top of the dough.
Place the pie in an oven preheated to 180°C. Bake for 20-30 minutes.
Remove the pie from the oven and let it cool. Remove from the pan and sprinkle with powdered sugar, if desired.

If you want to cook big and lush charlotte, check out this video from the channel "Vkusno Live." In this video, the channel's creator explains how to ensure a pie rises well in the oven while ensuring its filling is perfectly baked.
- choose firm, sour apple varieties, so the pie will be more delicious;
- There is no need to peel the apple skins, as they will become incredibly soft during cooking and will be practically undetectable;
- It is better to use a tall baking pan for the dessert, with a diameter of 21-24 cm; in wider pans, the charlotte may turn out less tall and fluffy;
- The dessert must be baked in a well-heated oven. Otherwise, it will turn out flat and dull.
- You can cut the apples using any method you prefer. You can also dice them and mix them into the dough to ensure the pieces are evenly distributed throughout the pie.
- Do not open the oven while baking, otherwise the charlotte will settle and turn into a dry and inedible mass;
- To check if the charlotte is ready, pierce it with a skewer. If the skewer comes out clean and comes out easily, it's ready.
Try making this luxurious treat yourself. I guarantee you'll love the results!
