The key to any dish is following the recipe precisely. Use the highest-quality butter, but overbeat it, and you'll no longer achieve the perfect creamy consistency. The taste won't be any different, of course, but you always want to impress your guests by presenting the dish beautifully.
The same principle applies to baking—always stick to the recipe. Even if you substitute ingredients, make sure the proportions are correct. Today, we'll make an airy, fragrant, and delicious apple charlotte, the secret to which lies in the cooking technique.

Butter20 G

Vanilla sugar10 G
-
Baking powder1 tsp
-
Salt1 pinch
Add baking powder to the flour and mix everything well.
Peel the apples and cut them into thin slices. You can use a knife or a coarse grater.
Sprinkle the apples with a packet of vanilla sugar and stir. Add cinnamon if desired.
Lightly salt the eggs to ensure they beat well. Add sugar. Beat the eggs with a mixer for 5–7 minutes until fluffy and white. The mixture should turn white and double in size.
Combine flour and baking powder and fold into the egg mixture in one go. Sift the mixture thoroughly. Mix thoroughly.
Take a couple of spoonfuls of dough and combine them in a separate bowl with melted butter. Be careful not to over-collapse the dough.
Add the butter mixture to the dough and mix.
Line the bottom of the pan with parchment paper. Grease the sides with butter to prevent the dough from breaking while rising. Add the dough, then the apples.
Bake the charlotte at 170 degrees Celsius for 45–50 minutes. Check for doneness with a skewer.
Let the pie rest in the pan for about 10 minutes. Carefully remove the charlotte from the pan and serve. Enjoy!

- The classic Charlotte recipe doesn't include sour cream or butter, but you can add one of the ingredients according to the recipe—this will make the dough soft.
- It is best to stir the dough after adding flour with a silicone spatula so that it does not fall and lose its airiness.
- It is not recommended to open the oven door during baking, otherwise the sponge cake dough will fall and the charlotte will turn out flat.
- To prevent apples from turning brown before using them in the pie, you can lightly sprinkle them with lemon juice. This will keep the filling light and look beautiful when cut.
- Apples can be peeled or left unpeeled. Apple skins are rich in vitamins, but they lose all their properties after cooking. If the skin is too thick, it's best to discard it, while thinner ones will impart a richer flavor to the filling.
If you decide to prepare charlotte for the holiday table, 50% of your success will depend on how you serve it.
First of all, you should make sure you have a beautiful platform on hand. A fluffy cake looks best on a flat plate.
Let the charlotte cool thoroughly, then cut into portions. It's important that the pie be completely cool, otherwise it will crumble. Use a serrated knife or wet a regular knife with hot water.
Before serving, you can place the pie in the oven for a few minutes to warm it up and give off a delicious aroma.
And don't forget the accompaniments: jam, preserves, sour cream, or cream. You can spread them on top of the charlotte or serve the sauce in a separate bowl.
