In the eggs, separate the yolks from the whites.
Add the sugar substitute to the yolks and beat until smooth, about 30 seconds.
Beat the chilled egg whites with a mixer at high speed until stiff peaks form.
Add the whipped egg whites to the yolk mixture and carefully mix everything with a spatula until completely combined.
Pour in finely ground coconut flakes and sifted almond flour.
Add melted coconut oil for elasticity. You can substitute butter.
Knead the dough. It will be textured and thick, like sour cream. If the dough is too thick, add a tablespoon of water or, better yet, coconut milk.
Peel the apples, core them, and cut them into small cubes. Add them to the batter and mix well.
Line the bottom of the pan with parchment paper. Spread the dough over the top, smoothing the surface. Bake for 40–45 minutes at 180°C.

Unlike the classic version, the almond charlotte's flavor is best revealed after it's completely cooled. Therefore, I recommend making the pie the night before, and it will be absolutely delicious in the morning.
