Charlotte with sour milk and apples
Never throw away sour milk. Essentially, sour milk is almost like kefir. This means you can make amazing, airy desserts with it. The milk's slight tartness, for example, will perfectly enhance the flavor of apples. This will make the charlotte even more flavorful.

Milk can sour in different ways depending on the manufacturer. If it has completely separated and large clumps of whey are floating in the mixture, simply whisk the mixture. It will come together, and you can begin making the charlotte. A mixer will bring the soured milk to the perfect consistency.
Yogurt or kefir can be used as a base for the charlotte instead of sour milk. You can use either store-bought or homemade ingredients. However, it's best to avoid fermented baked milk, as it will make the dough tougher.

Beat the eggs with sugar and salt until smooth and fluffy. When the mixture begins to increase in volume, add vanilla sugar and baking soda slaked with vinegar. Mix thoroughly until smooth.
Now pour in the sour milk and beat well again so that it is evenly distributed.
With the mixer running, pour in the sunflower oil. Use refined oil to avoid the unpleasant taste of stale sunflower seeds. Add the pre-sifted flour and mix until you have a smooth, lump-free dough.
Cut one apple in half, remove the core and divide into quarters, then cut into thin slices.
Line a baking pan with parchment paper and grease with sunflower oil or melted butter. Sprinkle the bottom with 1 teaspoon of sugar and arrange the apple slices from the edges of the pan to the center. Dice 1 apple and mix it with the dough.
Pour the batter into the pan and smooth the surface. Slice the remaining 2 apples into wedges and arrange them on top, standing upright, in a spiral from the edges to the center of the pan.
Bake the charlotte in an oven preheated to 180°C (350°F) for 40 minutes, until the crust is crisp and golden brown. Then let it cool completely in the pan, remove it, and sprinkle with powdered sugar and cinnamon. Add spices if desired.
The sour milk charlotte is ready. Cut into slices and serve.
