Preparation

Step 1

Crack the eggs into a bowl and add the sugar. Whisk gently until smooth.

Step 2

Peel and core the apples, dice them, and set aside. Set aside one apple for garnish. Add the margarine, slightly melted in the microwave or in a double boiler, to the eggs and mix.

Step 3

Add half of the flour taken from the total amount and knead the liquid dough.

Step 4

We extinguish the baking soda with vinegar, pour it into the dough and mix well so that the homemade baking powder is evenly distributed.

Step 5

Add the remaining flour and mix. The dough will be quite thick and dense, but don't worry; that's how it's supposed to be in this recipe. Then add the chopped apples and mix until smooth.

Step 6

Grease a 24-27 cm diameter springform pan with vegetable oil and line it with parchment paper. Place the dough in the pan and smooth the surface with a flexible spatula.

Step 7

Peel the last apple, cut it into slices and arrange the pieces in random order and sprinkle with sugar.

Step 8

Bake in a preheated oven at 150-160°C for 30-35 minutes. Be sure to check for doneness with a toothpick: if the tip comes out clean, the cake is ready. Let the cake cool completely, then dust with powdered sugar.

Step 9

The apple charlotte with margarine is ready. Cut into portions and serve with tea.

About the harm of margarine
Margarine is currently considered generally safe for human consumption. However, manufacturers insist that baked goods containing it should not be heated above 200-220°C, as this will release harmful substances.
Alternative to margarine
You can completely replace margarine with butter. This will result in a more uniform charlotte dough thanks to the more even distribution of air bubbles released by the baking powder. Coconut oil is also excellent for baking, as a complete substitute for traditional fat-containing products.
Control the number of apples
If the fruit is too juicy, it's best to use slightly less of it in the dough or toss it in flour first. Otherwise, the excess juice may cause the dough to take a long time to bake and remain soggy even after the topping has burned.
