Charlotte with apples on water

This recipe contains neither milk nor butter. Yet, this vegan charlotte made with water turns out just as flavorful, fluffy, and tender. And if you replace the wheat flour with corn, oat, or rice flour, you'll also get a gluten-free dessert.

Charlotte dough with water Whenever possible, cook with added fat. Sunflower, olive, or coconut oil are ideal. These ingredients will make the dough tender and fluffy. They're also a great substitute for eggs, which play a crucial role in dough rise.

By the way, if you use olive oil instead of regular sunflower oil, the pie crust will be even crispier, golden, and more beautiful. The dough won't taste greasy at all.

Preparation

Step 1

Place the pre-sifted flour and baking powder in a bowl. Add both types of sugar, cinnamon, and a pinch of salt.

Step 2

Whisk until all the spices are evenly distributed. Add cold water and sunflower oil.

Step 3

Knead the dough until smooth and lump-free, then add two peeled and diced apples. Mix thoroughly with a spatula.

Step 4

Transfer the dough to a parchment-lined baking sheet and smooth the surface. Slice the apple thinly, peeling it, and sprinkle with lemon juice. Mix well and arrange the dough in a spiral, half upright, on the surface of the pie, from the edges of the pan toward the center.

Step 5

Sprinkle with 1 teaspoon of sugar and bake in an oven preheated to 180°C for 45-50 minutes.

Step 6

The water-based charlotte is ready. Let it cool slightly, then remove it from the pan, sprinkle with powdered sugar, and cut into portions. Serve.

About greasing the mold
If you don't have parchment paper on hand, you can grease the pan with butter or create a "French shirt" by dusting the surface with flour. However, don't try this technique with vegetable oil. Otherwise, the flour will stick to the pie in unsightly tatters. If you don't have butter, it's best to simply grease the pan with vegetable oil or use a pastry ring without coating it with grease.
